Wing Shooter's Pie
Sheppards Pie

     Shooting in Europe during the winter months is both exhilarating and challenging - you can expect any kind of weather, terrain and quarry - that is the fascination of walked-up and driven European Shooting. The hard-working hunter deserves an equally hearty lunch and the traditional British Hunting Lunch is a stew, casserole or pie. More often, this pie is served with seasonal vegetables, rounded-off with a strong cheddar cheese. Add too, a large glass of robust claret - just enough to “lubricate the swing”, but not enough to impair the ever-important safety awareness of the shooters.
      If forced to choose my favorite Shoot Lunch, I have always been torn between “Shepherd’s Pie” (Ground Lamb) and “Cottage Pie” (Ground Beef). However, this season I was treated to a new version called “Hunter’s Pie”, made with minced venison. This proved to be the perfect cold-weather Wing Shooter’s lunch and my new favorite.
      The rich blend and unique flavor of this ultimate organic meat is the best version of shepherd’s or cottage pie I have ever tasted. I know some of you shoot in warmer climates, but this is a true hunter’s feast - simple fare, simply made, and simply sensational!

Wing Shooter’s Pie

Ingredients:

2 large onions, peeled and chopped
2 lb. minced venison
2 cloves garlic, crushed
2 tbsp. plain flour
1/2 pt. beef stock
1 tbsp. tomato puree
3 tbsp. Worcestershire sauce
1 tbsp. fresh thyme leaves
Salt and freshly-ground black pepper
2 1/2 lb. freshly mashed potato (made with butter and milk)
2 oz. of grated cheddar cheese

Serves 4

      Melt the butter in a large saucepan, add the onion and cook until soft and golden. Add the venison and garlic, increasing the heat so the garlic and meat brown a little, stirring constantly. Sprinkle the flour over the mix, stir in well then add the stock, tomato puree, Worcestershire sauce and thyme.
      Season and bubble gently for 15 minutes, season again to taste, then spoon into a shallow dish.
      Fire up the broiler, spread the mashed potato in a layer over the mince and scatter with cheese. Grill until the top is crisp and golden brown and the filling is piping hot.
